The Chardonnay, Pinot Grigio, Sauvignon Blanc and Riesling were grown on Mount Canobolas, Orange. The varieties were barrel fermented separetely in older French barrels, and stored on lees for 6 months prior to blending. The wine has fresh fruity with a rich and complex texture on the palate and a hint of oak.
Cellaring: Hooky has kept this wine in his cellar for two years prior to release. This time has allowed for the flavours of each variety to intergrate with the oak characters. Although drinking beautifully already, it will continue to improve with further careful cellaring.
