This started out as a bit of an experiment a few years ago when David wanted to see how the three Italian varieties that he made Barbera, Nebbiolo and Sangiovese would look together. The result was a lot better than he was expecting and Hooky now sets aside fruit just for this blend.
The Barbera and Sangiovese are from Orange and the Nebbiolo is from Young. The varieties are fermented separately and the proportions of the blend change depending on the vintage. Fermented in traditional open vats, hand plunged and belnded after fermentation. The blend is then matured in older oak barrels for 12 months prior to bottling.
The wine is deep crimson red in colour. This wine has dry cherry and prune aromas. Savoury flavours dominate the palate which is medium bodied and finishes with a firm acidity accompanied by fine soft tannins typical of these varieties.
