The H&H Limited Release is a blend of two vineyard parcels, giving us the acidity, line and length we expect from our Semillons. Harvested by hand in February and sorted in the vineyard, the fruit was crushed, pressed and chilled, then racked after 48 hours on lees followed by a slow cool ferment with a neutral yeast. Once sulphured the wine was left to settle on gross lees for a period of time to encourage complexity and depth of flavour.
A softer, somewhat more approachable Semillon has resulted from 2017, with refreshing acidity, elegance and great flavour. The nose reflects absolute Semillon characters with aromas of lime zest, wet slate and waxy lanolin. While the juicy acidity fuelled palate, has a lingering lime and sherbet buzz.
