This release of Twenty Six Rows Chardonnay has been inspired by a parcel of fruit from one of the Hunter Valleys most iconic vineyards going back some 30 years, the De Bortoli Vineyard, located at the gateway to Pokolbin.
The Hart & Hunter team crushed and pressed the fruit, with a portion sent directly to oak for natural wilde ferment, while the remainder was settled, then racked after 48 hours. A portion of this wine was fermented in stainless steel, whilst the balance went to a mix of old and new oak barrels, for approximately 10 months. Wilde ferment and heavy solids have given this wine great concentration of flavour and texture.
This Chardonnay is picked early to retain natural acidity and citrus flavours to balance the depth and richness from the barrel ferment and regular lees stirring that followed. This small batch represents the selection of the best french oak offering unique structure, blended with a small portion of unoaked wine to increase the fresh lifted fruit on the palate.
A tropical perfumed nose follows with the palate being rich and textural. Lingering flavours of honey and creamy vanilla along with a dab of pineapple and butterscotch complement the charry oak component.
