The French call it Pinot Gris, the Italians Pinot Grigio- we just call it a fantastic variety!
Grown in the cool climate region of the Goulburn Valley, the vines are planted in a north south direction with extended trellising to allow the sunlight to penetrate the canopy. To maintain the delicate fruit flavours of the variety we harvest the grapes a little earlier at just under 13.0 Baume.
After harvesting in the cool days of March, the Pinot Gris grapes were gently crushed. As the grapes are highly coloured at ripeness, the juice was then quickly separated from the skins, with only the free-run portion of the juice used. For complexity a small portion of the juice was fermented in two year old French Oak barriques. The wine was matured for six months on lees with regular battonage. The remaining juice was fermented in stainless steel.
The wine has a slight copper hue which is a natural attribute of this grape variety. The grapes are highly coloured at ripeness and the juice has a beautiful pink hue while fermenting.
This Pinot Gris is slightly perfumed, slightly minerally and very tasty, with great texture and mineral characters on the palate. The richly textured palate has a dry slate finish making this the perfect white for salads and seafood.
