Liz and Shaun Silkman sourced their Chardonnay fruit from two outstanding parcels, both loam soils in the heart of Pokolbin.
Hand harvested, the juice was quickly extracted from the fruit and chilled. The wine was fermented on partial solids in barrel with maturation taking place over 6 months. No malolactic fermentation and little battonage (stirring) has delivered a finely structured but flavoursome Chardonnay. To deliver a balanced and finely structured chardonnay, the Silkmans are only using 500 or 600 L French puncheons.
Pale straw with a green hue, hints of grape fruit and flint meld together to deliver a complex and refreshing nose with generous citrus notes. Grapefruit flavours flow onto the palate with a great length driven by flavours of white peach and secondary notes of struck match. Minimal intervention has delivered a modern Hunter Valley style Chardonnay.
